Toxic – The Innocent Cucumber?

Crunchy cucumbers and refreshing green cucumber juices, yum! Sounds inviting, right? And don’t we all just love this veggie?

But could there be too much of a good thing? Is there any truth to the rumor of cucumbers being toxic?

Actually in the small patches of the cucumber that taste bitter, you find cucurbitacins (or tetracyclic triterpenoids) compounds that are very toxic. Excessive consumption of this is said to cause even death. Symptoms are stomach cramps, diarrhea, vomiting and headache.

Cucumber On the LimeI do not know how much excessive consumption is, and by the way excessive consumption of anything is not a good thing. If you juice a lot of cucumbers daily though, bitter juice that is, just be aware. These cucurbitacins have also been found in bitter zucchini, squash, watermelons and gourds.

Please do not let this information scare you to avoid eating cucumbers or rather making juices based on cucumbers. Just beware of bitter tasting juice.

Instead DO relish and celebrate this veggie. Since there are SO many benefits from consuming cucumbers, make sure to include them in your diet. Here are some:

Vitamin A, powerful for eyes
Vitamin C, prevents scurvy and is an antioxidant
Fibers, add bulk, aides digestion, helps prevent colon cancer
Magnesium, for strong bones, healthy immune system, keep heart, muscle and nerve functions normal
Potassium, key role in acid-base balance, increase bone-mineral density, muscle contraction incl. heart
Seeds, mildly diuretic
Silica, great for skin and radiant complexion
Water, hydrating and cooling

 

Cukes, pickling On the LimeIf you are still concerned and eat or juice a lot of cucumbers, maybe take a little break from them once in a while. And make a point to rotating using the burp less or European varieties, they are less bitter, or go with the small pickling cukes (see pic on the left) for a while.

I have consumed cucumbers almost daily for decades (!) and have never noticed anything negative from them. So make sure to appreciate the advantages and enjoy juicy crunchy cucumbers!

Giftig, Den Snälla Gurkan?

American cucumber slices On the LImeKnapriga gurkor och läskande grön gurkjuice, mums! Det låter väl inbjudande, inte sant? Och visst är den en favoritgrönsak?

Men kan det bli för mycket av det goda? Finns det någon sanning i ryktet om att gurkor kan vara giftiga?

Ja faktiskt i de små ställena på gurkan som smakar bittert, hittar man cucurbitaciner (eller tetracykliska triterpener) som är mycket giftiga. Överdriven konsumtion av dessa sägs till och med orsaka död. Symptomer vid förgiftning är magkramper, diarre, kräkningar och huvudvärk.

Jag vet inte hur mycket som innebär överdriven konsumtion, och dessutom överdriven konsumtion av vad det än kan vara, är ju inte bra. Men om du gör mycket juice på gurka dagligen, besk juice alltså, var då bara uppmärksam. De bittra curcubitacinerna hittar man också i besk zucchini, squash, vattenmelon och pumpa.

Cucumber shark OTLMen låt inte den här informationen skrämma dig så att du undviker att äta gurka eller snarare göra juicer med gurka som bas. Var bara uppmärksam på besksmakande juice.

Uppskatta och “fira” den här grönsaken istället.
För det finns SÅÅ många fördelar med att äta gurka, så se till att inkludera den i din kost. Här är några:

A-vitamin, kraftfullt för ögonen
C-vitamin, förhindrar skörbjugg och är en antioxidant
Fibrer, ger volym, hjälper matsmältning, hjälper till att förhindra tjocktarmscancer
Magnesium, för starkt skelett, starkt immunförsvar, hålla hjärt-, muskel- och nervfunktioner normala
Kalium, viktig roll i syra-bas-balansen, öka ben-mineral tätheten, muskelsammandragningar, inkl. hjärta
Frön, svagt vattendrivande

Vatten, ger vätska och svalkande

English cucumber On the LimeOm du fortfarande är oroad – och äter eller gör mycket juice på gurka, så gör ett litet uppehåll med att äta gurka någon gång då och då.

I de sorterna som vi odlar i Sverige är curcubitaciner bortavlade, men återmutationer kan ske.

Jag har ätit gurka nästan dagligen under decennier (!) även av de mer bittra amerikanska och har aldrig upplevt något negativt.

Så ta tillvara alla fördelarna i stället och njut av den knapriga och saftiga gurkan!
