A calcium bomb!
This cream carries a somewhat bitter and unique flavor, but is wonderful with sweet fruits and berries. It balances them well.
And like mentioned before it is a calcium bomb! It contains more calcium than cow’s milk and a lot of iron and vitamin E as well.
Milk and milk products are not always that good for us. They can cause many problems like producing phlegm and inflammations and allergies. They contain fat which is harmful for digestion, especially for the liver. In addition, depending on how cows are bred they may have received antibiotics, hormones and genetically engineered feed.
Furthermore, milk contains the sugar lactose and the combination of both fat and sugar can be damaging to health. In addition, by the age of 4, many people lose 95% of the enzyme lactase, which is needed to digest the milk sugar lactose.
So nut- and seed milks are a really nice alternative.
Sesame & Cashew Cream
Ingredients
½ cup sesame seeds, whole, not hulled
¾ cup cashew nuts
¼ teaspoon of real vanilla powder
a small pinch of Celtic or Himalayan salt
2 ¼ cups water
Preparation
Soak nuts and seeds for a few hours.
Drain and rinse.
Place them in a mixer bowl with some of the water. Mix until really smooth, add more water if needed.
Add vanilla, salt and remaining water and mix until smooth and even.
Store in a glass jar with lid in the fridge. The cream thickens when chilled.
Serve with fruit salads and berries.
For a thinner cream / milk dilute with more water.
