Nut meat – a vegan meat with wonderful texture and flavors.
Savory and somewhat salty, this nut meat is a great addition to your marinara or pesto topped zucchini or squash “pasta”.
Look for fresh herbs called Poultry Blend, which is a mix of sage, thyme and rosemary. For dried herbs use 1 teaspoon instead of 1 tablespoon fresh herbs.
2 cups walnuts, preferably soaked 6 hours
3 tablespoons chopped fresh Poultry Blend herbs
2 tablespoons chopped parsley
1 tablespoon Tamari or Nama Shoyu
Ground black pepper to your liking
Place all of the above in a food processor and chop until well mixed, but still fairly “crumbly”.
