This is a juicy and crunchy salad. Both sweet and tart. And so quick and easy to make.
Do place on some lettuce leaves and make cute little wraps!
1 apple, tart is great
½ tablespoon olive- or other oil of your liking
1 tablespoon grated ginger root
2-3 drops essential lemon oil, food grade quality (or grated lemon peel)
A handful of raisins
A handful of pumpkin seeds
Optional: lettuce leaves as wrap
- In food processor grate carrots and apple. Place in a bowl.
- Add olive oil, ginger and lemon oil or zest. Plus raisins och pumpkin seeds.
- Stir to combine and serve.
- Or place on individual lettuce or cabbage leaves and make wraps.
