Emilie and me with pestoMeaning Thank you – Pesto! in Italian.

The famous Italian sauce, pesto, is based on fresh basil leaves, pine nuts, garlic, Parmiggiano Reggiano cheese and olive oil.

Here is a favorite raw version using nutritional yeast, omitting the cheese.
Use it as dip, top cucumber slices and tomato halves, or pour generously over zucchini or squash “pasta”.

 

Removing basil stemsIngredients
½ cup pine nuts and brazil nuts, mixed
1 tablespoon olive oil
3 cups loosely packed fresh basil leaves, stems removed
½-1 tablespoon lemon juice
1 tsp pure sea salt flakes
3 tablespoons nutritional yeast
½ clove garlic, crushed
1 tablespoon water

 

Directions
1. Place nuts in food processor and process to meal.
2. Add olive oil and pulse.
3. Add the basil and pulse to mix.
4. Add lemon juice, salt, nutritional yeast and water. Process to creamy sauce.
5. Add the garlic and pulse to mix.

We did not add any garlic to our sauce, since this was going to be a kid’s pesto.
But garlic is both beneficial and adds depth to the sauce. So please add some for a more grown-up version!

Den berömda italienska såsen, pesto, är baserad på färska basilikablad, pinjenötter, vitlök, Parmiggiano Reggiano-ost och olivolja.

Här är en raw favoritversion med näringsjäst, istället för ost.
Använd den som dip, toppa gurkskivor och tomathalvor, eller häll generöst över zucchini eller squash “pasta”.

 

Removing basil stemsIngredienser
1 dl, rågad mix av pinjenötter och paranötter
1 matsked olivolja
7 dl löst packade färska basilikablad, utan stjälkar
½-1 msk färsk citronsaft
1 tsk havssaltsflingor
3 msk näringsjäst
½ vitlöksklyfta, krossad
1 msk vatten

 

Gör så här

  1. Placera nötter i matberedare och kör till mjöl.
  2. Tillsätt olivolja och pulsera.
  3. Tillsätt basilika och pulsera för att blanda.
  4. Tillsätt citronsaft, salt, näringsjäst och vatten. Kör till krämig sås.
  5. Tillsätt vitlök och pulsera för att blanda.

Vi lade inte någon vitlök i vår sås, eftersom det skulle bli en barnpesto. Men vitlök är både gott och nyttigt och ger lite extra till såsen. Så lägg till en liten klyfta för en mer vuxen version!
