This is one of my favorite soups. A delicious, protein rich and filling soup; easy and quick to make. Use frozen peas if fresh are out of season. Ginger will add heat and spark to the peas. Use warm water and a warm bowl for a cold day.
1½-2 cups green peas, fresh or frozen (thawed if frozen)
1 small avocado
1½ cup water
1-2 tablespoons fresh grated ginger
1 clove garlic, small
1-2 teaspoons apple cider vinegar
Salt and fresh ground pepper to your liking
Optional: handful arugula or other greens
Serving suggestion: sliced radishes and chopped avocado.
- Place peas and avocado with water in blender and mix until creamy.
- Add ginger, garlic, apple cider vinegar, salt and pepper to your liking and greens if using. Blend until creamy. Taste and adjust.
- Pour into bowls and serve with sliced radishes and diced avocado. Enjoy!
