A delicious and easy to make soup, that takes no time to prepare. It is great for summer because of the naturally high organic sodium content in both celery, sea salt and dulse flakes. The soup turns out really creamy when you blend it in a power blender, but tastes just as good in a regular blender. Dulse flakes also add lots of minerals.
Ingredients
1 large bunch of celery with some leaves, 8-10 stalks, 6 cups of 2” pieces
1-2 tablespoons of freshly squeezed lime or lemon juice
1 tablespoon oil, flax or olive
1 tablespoon raw honey
1 teaspoon purs sea salt
Pinch of freshly ground black pepper
1½ cups water
1 avocado, diced
Directions
1. Combine the celery, lime/lemon, oil, honey, salt, pepper, and water in a blender and process until completely smooth and creamy.
2. Place the avocado in serving bowls and pour the soup over. Top with arugula and sprinkle with dulse.
What is Dulse?
Dulse is a mineral rich seaweed which comes in strips or flakes. The flakes conveniently dissolve in liquid and add a pleasantly salty flavor. Use instead of regular salt and up your iodine intake.
