Combo puddings!

Combo puddings apple chiaI LOVE combo puddings. Don’t you?
I think it is plain luxury to enjoy two puddings combined – totally different in texture and flavor for breakfast (or snack).

Granted, they take more time to prepare,
but so worth it, right?

So what’s in these yummy looking puddings?

In this special combination I used an apple, some fresh apricots and parsley as the main ingredients in one of the puddings. And for the other to balance the tartness, I chose a creamy cashew-chia pudding flavored with dates and cinnamon. Delish!

Serves 1. (Serves 2 if you generously top with berries, fruits and nuts)

Recipe

Apple-apricot-parsley

Ingredients
1 apple, seeded and in chunks
3 fresh apricots, pits removed, in chunks
1 large handful parsley leaves
1 small handful hemp seed
1 small handful goji berries

Directions
1. Chop all ingredients in a food processor with the S-blade until you have a texture you like.
2. Pour into a serving bowl.

Combo puddings raw food On the LimeCashew-chia

Ingredients
2 tablespoons chia seeds
¾ cup water
⅓ cup cashew nuts, preferably soaked 2-4 hours
2-3 dates, depending on size
½ teaspoon cinnamon
pinch salt

Directions
1. Pour water and chia seeds into the blender bowl. Mix gently just to coat. Let soak for 20-30 minutes.
2. Add cashews, dates, cinnamon and salt and blend until very creamy. Taste and adjust.
3. Add to the serving bowl.

Optional: top with berries, nuts, seeds, chopped fruits, goji berries, etc.
Enjoy!
