Raw almond cream is such a wonderful treat. It is great with fruit salads etc. and is an important base for the famous Bircher Muesli.
In this almond cream recipe we let the fibers remain to give more of a substance to the cream.
1½ cups
Ingredients
3/4 cup almonds and cashews soaked for 8-12 hours, drained and rinsed
1-1½ cup water
½ teaspoon vanilla extract
1 tablespoon raw date syrup, honey, coconut syrup, or other sweetener of your choice
Instructions
Combine all ingredients in a blender and process on high speed for a long time to a really smooth, creamy consistency. Taste, and add more of the homemade date syrup if you like. Depends on how tart the apples are.
The cream will keep for up to 4 days in a sealed glass jar in the refrigerator.
Note that the cashews only need to soak for 2-4 hours, but it is more convenient to just let them soak along with the almonds.
Tip
Store soaked nuts in a sealed glass jar in the refrigerator. They will keep for up to a week with an occasional rinse. You then have them handy for when you want to make cream or milk.
