Nothing Beats A Live Class!

Books and YouTube

You can get a lot of good information from books, YouTube clips and other various internet sites etc. – which is all great! But you cannot get everything from these venues. There is nothing that compares to a LIVE class where all of your senses are involved.

All of your senses

• You see the bright colors of foods and ingredients.
• You smell the citrus, garlic, fresh basil and cinnamon etc.
• You taste various flavors like sour, spicy, sweet, bitter, and salty and experience different textures.
• You touch and break the crackers, spread the butters, sip the drinks, stir the soups, dip the veggies, pour the sauces, and so on.
• You hear the “lecture”; the questions and answers; and the laughs from you fellow students. And you will long remember the atmosphere and the experience.
Not only will you get to hear all the facts and the tips, but you get to ask questions! On what concerns you the most.

Taste
But most of all you get to TASTE the foods. To experience how raw foods actually agree with your palate and to become familiar with the variety and textures of these wonderful raw food dishes.

An involvement like this makes for a fuller impression and hopefully will inspire you to continue choosing the more wholesome (yet delicious tasting!) foods and knowing that there is something better out there for you.

Participate

So look for meet-ups, demonstrations, classes and events in your area and try to participate in as much as you can. You will not only get to learn, but become inspired and maybe even bring home some great tasting recipes!

A new better you is out there waiting!
Wishing you good luck

Enthusiast Class 17 – Cool Summer Foods!

Cool As A Cucumber!

Summer is approaching and with that comes luscious flowers and plants, warm ocean water to swim in AND HOT weather. Really hot weather!

Foods carry certain energies

The foods we eat have an effect on us. They carry certain energies. Some foods have a warming energy, some are neutral and then again some are cooling. In a really warm climate we need to eat foods that not only supply us with water but that have a cooling effect on us as well.

Choose foods with certain energies

Wouldn’t it be beneficial to choose more of the foods with cooling energies to help us out? But then of course you need to know which ones they are. The same goes for winter or colder climates; try to avoid the foods that have a cooling effect on you and choose more of the warming ones.

Juicy watermelon
We have all enjoyed a juicy slice of watermelon on a hot day, right? Delightfully refreshing, vitalizing and cooling. But there are so many other wonderful “cold” foods to choose from besides cucumber and watermelon.

Bonus

I have made a list of all foods which carry cooling energies that can refresh and vitalize us in hot weather. It is yours for free when you attend this class. Make use of this list when choosing ingredients for your meals to stay cool (calm and collected as well!) whether it is breakfast, main meal or snack.

In winter

Besides picking cooling foods for hot climate, this list is great to study when choosing what to avoid when preparing meals in colder weather – to keep warm!

The Raw Summer Foods

The yummy dishes you will learn to make and get to taste in this last Enthusiast class #17 before summer break are:

Purple Chia, a refreshing breakfast
Cooling Melon Soup
Invigorating Cucumber Salad
Vitalizing (and filling) Pink Corn Chowder; since fresh corn is in season
Strawberry & Grapefruit sorbet; snack or dessert

Pineapple Chlorella Smoothie

Some people might find pineapple too sweet, but when adding pleasantly bitter Tahini and green chlorella* you get a great combination.

Pineapple is not merely sweet, but also sour and cooling. It contains bromelain a powerful anti-inflammatory agent. Bromelain moreover has chemicals that might interfere with the growth of tumor cells and slow blood clotting, according to laboratory research.

Furthermore pineapple promotes bone density, cools the blood, helps skin retain youthfulness, and speed healing after injury.  See tip below.

PINEAPPLE CHLORELLA SMOOTHIE

2 servings (2½ cups)

Ingredients

½ pineapple (approximately 2 cups blended)

1 tablespoon raw Tahini
1 teaspoon chlorella2 large handfuls spinach leaves (or other greens)

Preparation
Blend all ingredients until smooth and creamy.

Tip: Left-over smoothie mixed with water makes for a great work-out drink; fruity, tangy, and green; even got some protein in there too!

Remember – cools blood and speeds healing after injury!

Chlorella

Chlorella has been around as a health food for a long time but deserves our attention and needs to be acknowledged all over again for the many benefits it brings.

Chlorophyll
Chlorella is a single-celled water-grown green algae. It contains more chlorophyll per gram than any other plant in the world.

Detoxifying agent
It is a first-class detoxifying agent capable of removing alcohol from the liver and/or clearing heavy metals and other toxins from the body’s tissues; specifically mercury (which is widely present in the bodies of many people in the form of dental amalgam fillings), cadmium, arsenic, lead, DDT, and PCBs.

Protein
Chlorella is one of the highest sources of protein on the planet, 45% (according to some sources 60% pure digestible protein). Animal products like beef, chicken, and fish are only 18-30% protein.

Superfood
Chlorella is a whole food and a true superfood. It is one of the most heavily researched algae in the world. Chlorella contains vitamins C and E, an array of B vitamins, amino acids, folic acid, beta-carotene, lysine, and iodine. Chlorella is also extremely rich in iron and calcium.

Helps promote clean blood
Chlorella supports the function of the brain and liver, improves digestion and elimination, helps regenerate the body, protects against radiation, relieves inflammation, supports healthy weight loss, enhances the immune system, and overall accelerates the healing process within the body.

Gradually introduce
While it is almost impossible to take too much Chlorella, it is important to introduce it gradually into your diet in order to allow the body to adapt to its deeply regenerative effects, especially on the digestive and intestinal systems.

Start with ½ teaspoon per day and then slowly increase. Serving size is usually one teaspoon = 2 grams.

What Biotech Company Blamed for Bee Collapse Just Bought Leading Bee Research Firm?

Bee colonies around the globe are mysteriously disappearing, a phenomenon known as colony collapse disorder (CCD); one forerunning theory is that genetic engineering of crops is involved.

Monsanto, which is the world leader in genetically modified (GM) crops, recently bought Beeologics, a company whose primary goal is to control the colony collapse disorder. Monsanto, has been named the worst company of 2011 by Natural Society for “threatening both human health and the environment.” …more

The forthcoming research from Beeologics may now be tainted with regard to Monsanto products and their impact on bee populations, now that Monsanto owns it lock, stock and barrel…

If you want to help preserve the honey bees, support organic farmers and shop at local farmer’s markets as often as possible

Top 10 hot spots to be raw!

Where in the world is the best place to be raw? Frederic Patenaude* reports, in an article in Get Fresh magazine, on the top locations for living the raw food lifestyle.

1.    California
As no surprise, California is the Mecca of the raw food lifestyle.
Year-round sunshine and mild weather (at least the southern part), an abundance of organic food and farmer’s markets, more raw food restaurants per capita than any other place in the world, and an endless number of events, potlucks and like-minded people to connect with.
- Traffic and pollution in the cities.

2.    Australia
There is a thriving and booming raw culture in Australia, with every major city having its own raw food movement. Australia grows almost every kind of fruit locally, and combined with lots of sunshine in most parts of the country, it’s no wonder many raw foodists want to live there.
- Protectionist policies combined with natural disasters have recently brought the price of bananas over $15.00/kilo (2,2lbs)! Hopefully with more replanting the coming year will be better.

3.    Miami and Southern Florida
Dedicated raw foodists thrive in the tropic of North America. The raw food scene is not as extensive as it is in some parts of California, but there are excellent farmer’s markets, some catering to raw foodists, as well as good spots to find some of the best tropical fruit you’ll find in North America.
- In the hurricane belt, and summers are hot and rainy.

Other raw food hot spots are

4.    Oregon with some of the best organic farmer’s markets in the country, the raw food scene is quite developed and it is more affordable to live in than California.
- Winters can be gray and rainy.

5.    Vancouver, Canada is often rated the best city in the world to live in, with lots of markets, raw restaurants and a good number of potlucks.
- Infamous for its rain and long depressing, grey winters. Rents and real estate prices are some of the highest in the world.

6.    New York City, lots of raw food restaurants, potlucks and en excellent selection
of organic produce and ethnic markets.
- Traffic, pollution and the smell in the summer.

7.    Chiang Mai, Thailand, a fruit paradise. Although most big cities in Thailand offer a great selection of tropical fruits and produce, this city is full of expats and its climate is much milder, as long as you don’t come in the hot season. Prices are rock bottom and very little tourists.
- Chances are you do not speak Thai, pretty crowded with motorcycles and pollution.

8.    Spain (Fredric had a hard time deciding between Italy and Spain. Italy for its wonderful culture and great local fruits) but more European raw foodists prefer to relocate to Spain to grow their own gardens. You also find a lot of sub-tropical fruits like cherimoya (custard apples).
- Used to be cheap before the Euro, now it is more expensive.

9.    London and the UK. It is very easy to get fresh organic produce and imported fruit in UK cities, as well as all things organic and alternative. There are many raw food fans, making it easy to connect with like-minded people.
- It is definitely not tropical and can be expensive.

10.    Costa Rica is one of the most beautiful countries on Earth, especially for someone who appreciates nature and animals. Excellent farmer’s markets throughout the country and very affordable by North American standards. Many raw foodists have relocated here and the local culture is friendly to foreigners. Best place to live is at higher elevations, where the climate is near perfect with a year-round, spring-like temperature.
- Areas by the beach are hot and humid and prone to infestation by ants and cockroaches. It is a different language and culture; and crime is on the rise.

The runners-up

Toronto and Montreal

for their wonderful farmer’s markets and fruit selection.

Hawaii for the best combination of island life and modern infrastructure.

New Zealand (North Island) just because it’s beautiful there, even though there are not many raw foodists.

Monsanto worst company of 2011

Monsanto, the world leader in genetically modified (GM) crops and seeds, has been named the worst company of 2011 by Natural Society for “threatening both human health and the environment.”

Monsanto can count among its ranks some of the most dangerous products known to man, including Agent Orange, dioxin, and GM seeds. GM foods could be one of the most significant threats that we have against the very sustainability of the human race.

Virtually all of the claims made for GM crops – increased yields, more food production, controlled pests and weeds, reductions in chemical use in agriculture, drought-tolerant seeds – have not materialized, while serious risks and consequences, including herbicide-resistant super weeds, super pests, uncontrollable cross-contamination and health problems from GM foods, have emerged.

Federal Government
Once you realize just how many of Monsanto’s employees have shifted into positions of power within the federal government, it suddenly becomes a lot easier to see how this biotech giant has managed to so successfully undermine common sense.

What to do?
You can stop supporting Monsanto by boycotting GM foods and supporting California’s 2012 Ballot Initiative to require labels on GMOs.
Please get involved and help in any way you can. We CAN shift the balance by simply voting with our pocketbooks and forks. Europe successfully did this over a decade ago, without any government assistance, and Americans can drive GMO’s out of our food supply as well, but it requires educating the public about what GM foods are.

If you live in California

Volunteer to gather petition signatures.

If you live outside of California

Please donate to help support this Initiative and spread the word to everyone you know in California. Be assured that what happens in California will affect the remainder of the U.S., soplease support this important state initiative, even if you do not live there! http://organicconsumersfund.org/donate/

Your foods

Buy USDA 100% Organic products when possible, as these do not permit GM ingredients, or buy whole fresh produce and meat from local farmers. The majority of the GMO’s you’re exposed to are via processed foods, so by cooking from scratch with whole foods, you can be sure you’re not inadvertently consuming something laced with GM ingredients.

When you do purchase processed food, avoid products containing anything related to corn or soy that are not 100 percent organic, as any foods containing these two non-organic ingredients are virtually guaranteed to contain genetically engineered ingredients, as well as toxic herbicide residues.
